THE ORIGIN STORY
The exact origin of kombucha is unknown, however, it most likely originated in Manchuria, in northeast China. It was glorified during the Tsin Dynasty (about 220 B.C!) for its amazing detoxifying and energizing properties.
Fast forward to 414 A.D Japan where a physician named Kombu (see where this is going?) used the fermented tea, then named Mo-Gu, to cure Emperor Inkyo of his digestive issues.
As the silk road expanded, kombucha made its way to Russia, then spreading through Europe, Africa, and a few hundred decades later alllll the way to Malignant Cove, Nova Scotia, where Cove Kombucha was born! 😉
WHAT THE HECK IS IT?
In the simplest of terms, kombucha is a fermented tea beverage. Yummy, right? It is generally made with either black or green tea, sweetened and cultured with SCOBY. That stands for Symbiotic Culture Of Bacteria and Yeast. Kombucha can be left to ferment from a few days to even a month. This natural fermentation creates the classic fizziness booch is known for. After, fruits, veggies, herbs, spices, and whatever your heart desires can be added to the bubbly brew to create all kinds of brew-tiful kombooch concoctions.
